The San Marzano DOP tomato has an ancient tradition of cultivation, a longer shape than the normal tomato with a bright red colour, a firm and fleshy pulp and a bittersweet taste. The cultivation and transformation is characterized and protected by a strict production protocol and by the Consortium of San Marzano DOP tomato, which protects its cultivation that must be on rows as in ancient times and its harvesting must be done manually. Then the San Marzano DOP tomato must be only transformed in entire peeled tomatoes or fillets.
There is a long history connected with this tomato: it can be eaten with pasta, meat and fish or on a pizza, but you can do nothing other than give pleasure to your palate for its unmistakable taste and recognize that it is a great gift from the Agro Sarnese-Nocerino region.
